Maple season is officially underway, and I wanted to give everyone a clear update on what is happening with Cooking Buckets in Chelmsford.
Jamie operates two very different sugar bushes here in town.
The first is a traditional hillside sugar bush. This is what most people picture when they think of maple syrup production. Long lines stretch across mature sugar maples on a slope. These are larger trees with larger taps, and the system uses vacuum to increase sap flow. This location produces the bulk of the sap volume.
The second location is the agricultural sugar bush at Sunny Meadow. This is a plantation-style bush made up of smaller, more densely planted maple saplings. It also runs on vacuum but uses smaller 3/16 taps. The volume is lower, but the sugar content is significantly higher.
Here is where it gets interesting.
It takes about 40 gallons of sap to make 1 gallon of syrup. Jamie’s goal each season is roughly 60 to 80 gallons of finished syrup. That means thousands of gallons of sap need to be collected, transported, and processed in a very short window of time.
Sugar content matters.
The traditional bush typically yields around 2 percent sugar.
The sapling method at Sunny Meadow can yield as high as 3.6 percent sugar.
Both sap streams are mixed at the sugar house and run through a reverse osmosis machine that removes about 50 percent of the water before boiling. In maple production, it is all about water percentage. The higher the sugar content, the less water you have to boil off.
The traditional bush produces far more volume but lower sugar content.
The sapling bush produces less volume but higher sugar content and tends to run longer and is less dependent on perfect freeze-thaw cycles.
Having both systems in place helps balance production. Weather will always favor one method over the other, especially now that we are in meteorological spring. There will be hundreds of gallons to move every few days, and on optimal days I would not be surprised to see 250 or more gallons collected in a single day.
Now let’s talk weight.
Sap weighs about 8.34 pounds per gallon.
So 300 gallons of sap weighs roughly 2,500 pounds.
That is a serious load in the back of a truck.
Jamie has pumps and specialized syrup transport tanks in his truck. Both Sunny Meadow and the hillside bush have farm roads leading to loading points at the bottom of the hills. As long as he has a 4×4 truck and reasonable conditions, he can get it out. But timing matters.
Sap only lasts a few days before it must be processed, depending on the weather. Once the sap starts running, the sugar house is right behind it. When boiling begins, it does not stop casually. Once the fire is going, it generally runs all day and sometimes all night until that batch is fully processed into syrup.
It is a short, frantic, weather-driven season. That is what makes it hard. And that is also what makes it fun for those of us who support Chelmsford farming.

This is not a one-person effort. Jamie has friends and family helping move, load, and unload. Once boiling starts, someone must monitor it continuously. It is hands-on agriculture happening right here in Chelmsford.
We are the size of a small city, but with support from residents and town government, we still have working farms and real opportunities to see and learn about our agricultural past and present.
